We are seeking a Food, Nutrition, Lead - Cafeteria that will lead assist department supervisors by ensuring that Food Service staff are providing a high level of customer service for patients, family members, volunteers, physicians and staff. Must have comprehensive knowledge of, and be compliant with, specified regulatory requirements, and food safety and sanitation regulations for food service in a health care environment. Assists in monitoring the cleanliness and sanitation of area(s) of responsibility. Adhere to County/State Health department, hospital, and department standards, policies and procedures at all times. This lead position trains, coaches and communicates professionally and objectively in order to motivate and lead the team. Leads perform all duties in a manner which promotes and encourages a productive team environment.
Patient Dining Lead: Position responsibilities include leading the ambassador team to ensure patients receive high quality patient dining service that includes following diet orders, allowing for patient preferences, and ensuring excellent service to our patients. The lead acts as a liaison between nursing, ambassadors and patient dining management. This position requires excellent knowledge and experience of diet order and restriction, excellent customer service and time management. Assists in assigning work responsibilities to the ambassador team making daily decisions regarding work flow. Position responsibilities require excellent knowledge of food presentation and food handling processes to achieve high quality standards.
Production and Retail Lead: Position responsibilities require excellent knowledge and experience of all components of food preparation, production, cooking, presentation and food handling processes using a multitude of kitchen equipment to achieve high quality standards. This includes experience in batch cooking, line cooking, catering standards, presentation and service of hot and cold foods. Requires the ability to follow standardized recipes and prepare high quality patient dining and retail products using proper safe food handling procedures. Ensures staff is following department recipes for consistency and recipe adherence, monitors the overall quality and appearance of produced food items. Assists in assigning work responsibilities to the production and retail teams and making daily decisions regarding production and line service. Assists with forecasting, ordering, reviewing daily recipes and quantities.
In this position you will have the following responsibilities:
Oversee the production process of hot and/or cold foods including the prep and cooking processes, ensuring quality and consistency even when producing in large quantities
Be responsible for the production of entrées, starches, vegetables, soups, sauces, sandwiches, specialty features and salads on a daily basis from a retail cycle, catering and patient dining menu
Monitor recipe compliance and adherence by other team members
Adjust recipes and changes in computer system as necessary
Assist and oversees the production process, using a variety of different preparation techniques and equipment
Train and direct production staff as appropriate
Monitor and trouble shoots ordering, inventory/product, production and equipment issues
Monitor and oversees to ensure all food in the area of responsibility are organized, properly stocked, labeled, dated and stored in the appropriate and designated areas
Ensure food is stored at proper temperatures and is rotated as per department standards and FIFO principles
Be responsible for ensuring areas of responsibility are cleaned, sanitized, and restocked. Monitors monitor the serving stations and the refrigeration equipment on line and in the kitchen to ensure these areas are sanitized and in good working order. This includes all appropriate storage areas
Required qualifications for this position includes:
Oregon Department of Human Services Food Handlers Card prior to first day of work
Experience working successfully in a team environment to accomplish common goals
Two (2) years of Experience using food production software (i.e. Computrition), process orders essential for food operations, print necessary reports and update recipes in the data base
Three (3) years of Production and Retail Leads: Experience working in a high volume, full service restaurant or institutional food service facility
Preferred qualifications for this position include:
Must be ServSafe certified within one (1) year of hire
